They do not dismount the battery before changing steering wheel / airbag - they just wait until the light goes out of the start/stop botton which indicate that the car is in sleep mode (takes appr. 3min)

The battery is disconnected when it's shipped from production and isn't connected until the car needs to be driven off the transport truck.
